F n B gets potato crazy

Brekkie’s chef-extraordinaire is back to give us more delicious treats.
Luke Bolton joined Peter Barr on Breakfast with his recipe for Tarragon Potatoes.

Tarragon Potatoes
2 large potatoes
2 garlic cloves
Handful fresh tarragon (or 2tspn dried)
Whack of olive oil
Salt and pepper
Sour cream
Splash balsamic vinegar
Method
Preheat oven to 200C placing a small roasting tray with a good belt of olive in to heat up until its very hot!
In a peel toss the rough diced potatoes with the chopped garlic, herbs, a good twist and shake of salt and pepper and douse liberally with olive oil. Toss so potatoes are coated well with spices, herbs and oil.
With oven up to temperature carefully pour the potatoes into the hot oil, stir to coat and return to oven.
Cook for 30 minutes stirring every ten to get potatoes nice and golden crisp all over.
Take from oven and drizzle some balsamic vinegar and serve with a good dollop of sour cream.
Really great as a side to steak.
