School’s back and children across the state have made their way back for another year of learnin’.

Breakfast Chef Luke Bolton returned with a tasty treat for recess.

Date and Oat cookies

250gr butter (1cup)

¾ cup white sugar

¾ cup brown sugar

2 eggs

2 tspn vanilla essence

2 cups flour

1 tspn baking powder

2 cups rolled or quick oats

1 cup chopped dates

1 cup sultanas

Method

Pre-heat oven to 170c

Cream together butter and sugars and add eggs. Start slowly to mix then beat until combined to achieve a nice, creamy texture.

Stir in flour, baking powder and oats and mix on slow to combine.

Mix dates and sultanas in until combined. Mix tablespoons of mix into balls, place on greased trays and gently flatten.

Cook for 10-12 minutes, transferring to wire rack to cool. Store in airtight container.
